Colorless vegetables are good for you too

Although the vegetables in different colors are considered as an excellent source of nutrients and beneficial substances, also thanks to the pigments that make them so colorful, scientists point out that even white vegetables must be taken into account in a healthy and balanced diet

He speaks often of colorful vegetables. More and more they are colorful, beneficial qualities: thus we have orange vegetables with vitamin A (or beta-carotene) ... the red ones with their antioxidants ... those dark green with anti-cancer substances and so on.
But what about vegetables that have little color or are tending to white? Are worth less? Do they serve? Far from it.
Doctors recall that even this kind of vegetables must find place on our tables because they are essential for a healthy diet.
